The first true restaurant, Grande Taverne de Londres, opened in the Paris in 1782 by Boulanger. By 1794 there were five hundred restaurants in this city. Almost all countries in the Europe absorbed some of principles of French cooking. Exceptions were Italians, who had developed their own very strong culinary traditions.
The restaurants play an important role in society. People want not only nourishment but also social interaction and a success of restaurant depends on its positioning and its concept.
